Quality and Safety Characteristics of Mackerel (Rastrelliger Sp) at Domestic Markets in Jakarta Province

Abstract


Mackerel (Rastrelliger sp) is one of small pelagic fish that plays an important role in contribute of animal protein for Jakarta community, so its quality and safety is one of the important priorities that need to be considered and maintained. This study analyzes the quality and safety of mackerel throughout the distribution chain for domestic consumption in Jakarta Province, starting from the fish landing, fish auction, wholesale markets, restaurants, supermarkets, and traditional markets. The research method used was field observations by taking mackerel samples at each distribution chain and testing at the laboratories. Quality characteristics were tested organoleptically and safety was tested with the parameters of formaldehyde content. The results showed that 100% of samples taken from fish landing and restaurant met the freshness standard accordance with organoleptic parameters, while at the wholesale market/merchant trader, supermarkets and at traditional markets was 95%, 77%, and 65% respectively. The results also showed that some samples of mackerel taken from distribution chain, contains formaldehyde hazardous materials (4 samples from wholesale markets, 6 samples from supermarkets, and 57 samples from traditional markets). The concentrations of formaldehyde in the positive samples at three location mentioned above are 1.0-5.4 ppm, 2.5-6.6 ppm, and 0.2 - 13.4 ppm respectively
